My situation is a 5th wheel with a residential fridge. Where I camp I don't have power 24/7, most of the time I have AC from 8 AM to about 8 PM. I have a inverter on the fridge, what are your recommendations on keeping it going or at least keep the temp overnight.

If you stay out of it after 8 pm, it should hold temp fine overnight if the temps around the unit are not nuclear. If you have it on an inverter, pick a number and run it for a time. Once at 2 for a long time, twice at 12 and 4 for a shorter time, or whatever you decide. Try it and see what works.
