Used a different way of making wings last night and they came out outstanding. The steps are simply dry wings, smoke wings for 30 min at 250 then throw them in something hot around 450+ whether a convection oven or a grill. As I have my propane grill again I fired that up when the smoke phase was finishing and I threw them in a foil container and put in the grill for 10 minutes. Took them off and put them in a bowl with sauce, sauced them and serve. Super yummy!
