I’m a new full timer currently in a RV spot Oregon. I leave my grey tank open in general. We are forecasted for freezing temps 5-7 days. Should I close and dump as needed? I’m afraid of the drain hose freezing.

I would. My fear is frozen build up within the hoses. For city water lines you can get heated lines but if you don't have one then fill your fresh as needed and disconnect.

Like Neal said, fill your fresh tank so you can disconnect from the spigot. They can freeze, unless they are designed for colder weather. Far as the grey tank, the question is "Where is the valve"? If it is exposed then I would keep it open, but if it is covered, then keep it closed. Even with the valve open taking one shower will keep any ice from getting to be a problem. If it is only going below freezing during the night you probably won't have much of a problem. I have my hose insulated (no heat tape) and have seen temperatures as low as 24 degrees with no issue.
