My wife and I have narrowed down our search and appear to have settled in on one of the Rockwood Mini Lite’s. Currently we are trying to decide on a floor plan we like. But I wanted to see if anyone has any other recommendations?

Looking to keep as light as we can due to vehicle limitations. Will be towing with a 2012 Suburban with 8,000lb capacity so I would like to stay as far from that number as possible.

From what we have read the Mini Lite seems to be a pretty good line and most everyone seems to like theirs. Our holdup on floor plan is bug outdoor kitchen and no bunkhouse or smaller kitchen with bunkhouse.
 
Figure out what your payload capacity is then subtract the weight of the driver and passengers, the hitch, and anything else you think you may have in your Suburban. I looked and saw anywhere from 2450 pounds to 1565 pounds. The number you come up with will be the maximum tongue weight. The max tongue weight is about 12% of the GVW of the trailer you can tow.
