Total newbie here...We are planning to head "south" from Minnesota for spring break. We haven't touched our travel trailer since we winterized it in October (after only purchasing it in August). What do we need to think about/ check before heading out? How do we UN-winterize?

I am no pro but ours was winterized until we went for a recent extended weekend trip. We performed this at the campground. Simply connected the city connection line and the sewer hose then we opened the gray tank valve and we ran water through the lines (hot then cold) until no pink foam was left. We then proceeded to toilet then to the outside showers one at a time. We then opened our low drain points both hot and cold to finish off. Voila, done. There may be better suggestions from seasoned pros here on a better method. When I got home I used the campers onboard water pump to run some water from the white storage tank to mainly check if working properly. Afterwards since it was going to dip into some near freezing temps, I used my compressed air adapter to blow out the water lines completely.
 
Depending on the weather on your route south I would wait till in warmer climates and do as @Germanrazor suggests.
