My wife n I are looking for a first trailer. Well since about oh thirty years ago. Not new unit but used a couple of years. 28-30 foot range. Anyway neither of us care for bench seating but we see most come that way. Just the two of us. Can a bench seat be removed in place of a small table? Would it compromise the structural support if part of a slide out ? TY.

You should be fine. I remove them on two different rv’s and had no real problems. One had wiring that I had to reroute using a channel along the base of the wall.
In the pic below I replaced the couch with a longer recliner type and a swivel rocker. Then used dinner trays for eating/tables.
