I'd like to add a small exterior camera to the RV using the existing monitor. Does anyone have experience with the existing Newmar monitor installation (2018 CanyonStar), adding Aux cameras?

Would a 3rd party solution be better than what Newmar offers? Not always impressed with their component selections and going 3rd party is probably always preferred. For example, something 4K.

Trying to limit additional monitors, wires etc. The external camera (aftermarket, yet to be determined) to be installed will only be used sporadically for a specific purpose. The camera is to be mounted below rear fuel cap. This camera will be used to view RV orientation to the fuel pump and waste dumps.

Yep, a lot of options to consider such as that. Small high def camera, wireless, would be my choice. My Pioneer AVIC-8201NEX has an option for the rear camera but wired and I never ran it. I think wireless is the answer probably via smartphone with a RAM mount.
