Advice on finding a Class B day tripper

We are a senior couple (70ish) and are interested in trying to acquire a class b for day tripping. Our ideal model would be a Rialta but with a normal sized toilet that has been installed. We are not looking for overnight sleeping arrangements but would like a unit that we could use for day trips and have the advantage of our own personal bathroom whenever we wanted. We have health issues that require access to a bathroom at short notice. Most of the units that are like this all have a fairly small compartment or not at all. this does not suit us as my wife is claustrophobic and also mobility restricted. I know nothing about trying to retrofit a unit and even if I did don't have the skill nor location to do so. Does any of this sound doable?

For your needs I would go with a minivan lots of space and easy to sleep in it with all seats folded down. I know it is obvious but not many think about it.
