Regarding the ATC Override switch. What does it accomplish specifically and when would you use it.

Typically ATC in this context is for Automatic Traction Control.
Would assume that “override” would be when you want to turn it off, so you can execute drifts when cornering hard.

Trying to think of a situation where you wouldn’t want ATC, unless it was not working as expected.
 
If I remember from Spartan Academy😳, normal is as pictured in your post. Override is ATC not active. Example of use, traveling thru RV park on narrow gravel road and one side of drive axle is on grass and starts to spin. You can take switch out of override activating the ATC which then reduces spinning the wheels on grass, light on dash will illuminate.
 
My truck has it, and the manual tells me over ride improves MPG, makes sense to me!!!
 
Yes I would only enable the ATC when I needed it. It’s a very nice improvement and can help prevent getting stuck but for normal driving you don’t need it and I can see it decreasing fuel economy and also putting more wear on the involved chassis components.
