I am wondering if a 5'7' single person could use that bed in the slide closed position with the bed folded, for example for a quick overnight at a Cracker Barrel. Do people do this and remain moderately comfortable or is it a total no go?

No, owned an rv with a bed like that once, horrible design. Thought I could downsize, never again.
 
The dinette converts to a bed, doesn't it?
 
What does it look like when the slide is closed? Can you even get back to the bedroom?
 
Yes, I agree, it does seem to be unusable with the slide in.

As a potentially solo traveler, I am considering this sort of layout as a possible option, but with sleeping space above the cab for the quick Cracker Barrel type overnights with the slide in. I initially ruled this floor plan out, but there are workarounds. Since many people hate it, there may be better pricing for this layout, e.g. small (22' to 24') Class C, 2015 or newer for less than $40k.
 
Don't crimp. You might justify it in the beginning but over time, you will regret. Get what you like and can afford and as the song says.....
"Don't worry, be happy!"
