Dometic rm2552 intermittent heating on AC power?

Hello all I am new to the forms but not new to RVs. I have a 1998 Coachmen Catalina with a Dometic rm2552 Fridge. Running it on AC power. Over the past few weeks, it will be working totally fine, and then suddenly stop working for a few days, and then start working again. I have verified there's 120 volts going to the heating element & the heating element reads 63 ohms. I'm wondering where I should go next. The RV is sitting perfectly level. I was thinking of removing the thermostat switch (the knob with 1 through 7 and MAX on it) and testing it but I have to remove the entire fridge to remove said switch and get to the terminals on it. Any ideas?

You may have a blockage in the cooling lines. The fridge may need to be burped.

Did you check the vent, top and back?
Make sure it’s clear.
 
Does it work normally on gas? Using ohms law your 325 watt element should be at 44, not 63 ohms ( the sq. of 120 over 325). 63 ohms indicates your 325 watt element is heating at 228 watts. Intermittently operating indicates something may be heating up losing connectivity then reconnecting when cooled down. Or about a hundred other things. The board could be an issue as well.

The vent on top was blocked by snow for a few days, since it is the end of winter here where I live. It has been in the mid 40's for weeks now, but we still get little 1-2 inch snow spits, just enough to block the vent on the roof. I don't know too much about these fridges, so if a blocked vent would caue this issue, then maybe it is fine now? I will check. How can you burp these ammonia fridges?

This doesn't have a board in it. It is just a terminal block, very primitive electrical system on the fridge. Heating elements are cheap, so should I just throw one at it and see if it changes? I have not run it constantly on gas, but I can to see if the problem changes.
