We are impatiently awaiting the arrival —supposedly this April of our Jayco Greyhawk Prestige 31p 2021. I was wondering has anyone tried to swap out the queen mattress for a king by any chance? What about for two twins? Thinking of doing this upgrade ourselves after we get it. Has anyone done this? Just a thought. Not seriously thinking about it, but when you have MONTHS to wait for your rig...?

I do not believe a King Mattress will fit in the 31P floorplan. When the slide is retracted I believe the King Mattress will be too long.
It is a tight fit for the RV Queen Mattress at 60 x 74 as is.
 
You would need to measure the distance between the night stands, @2BUBears is probably correct.
