My Covid camper (Mesa Ridge 291RLS) is at it again. Electrical issues this time, throws breakers (especially the GFI), galley ceiling lights come on not so bright, then later suddenly get bright. None of the electrical outlets are functioning,but the microwave works.

Kidding aside, are you feeding her well? You may want a second opinion but it sounds like you have something trying to start.

Are her batteries run down? Could be the converter overloading and the thermal switch continually resets.

Could be her batteries are dying, as a possible cause of such a symptom. Then I am assuming you are on grid, with the properly rated pedestal.
 
I would also start at the power source after eliminating your batteries. I would also check the master common and ground (white and green) in the box as well as the hot or black wire. Most RV's are a rolling earthquakes and perhaps they didn't come torqued properly from the factory or have worked loose cause it sounds like a low voltage problem to me.
Please be careful however as this is dangerous territory if you don't know what your doing!
