I want to "retro" a 2005 Lance truck camper w slide

I recently bought a 2005 Lance truck camper. Nice condition inside and out but I want to totally modernize it. My initial experience with Lance is that the product seems well made but no one works at the company. I have tried 8 times with different numbers and can never get a human to talk to. Just ringing phones. Worthless customer support so far. I have built 6 homes and refurbed 3 VW vanagons, so I am familiar with the basic ideas of a RV. I am looking for any input at all on experience/ where to source parts, different ideas,etc on the following for my 821:

--- I want to replace. all 2005 appliances with new, smaller,more energy wise---but maybe I could find new that is the exact form and size as the old openings for stove, fridge, ac? Maybe I could replace all of old furnace witha new AC/ heat pump? Replace water heater with tankless unit? Scrap oven for some type combined oven/air fry/ micro? I'd love to hear any appliances ideas

--I want to ditch the old dinette table idea. Do they make any type of pedestal " swinging thing" table that could be turned to make a table or bed and also swiveled to be additional kitchen counter space?
--any cool electronics add ons?
--any cool lighting ideas?
---better water management ideas---faucets,flushing, tanks,etc?
