Intermittent Limp Mode

A few weeks back on a FB site, I posted about the fact that 6 miles after a refueling stop, my engine completely died and failed to restart. There were zero indications of problems or issues of any kind other than what I just described. I suspected bad fuel. In the end, I was wrong. After spending 24 hours in a parking lot that a kind tow truck driver pulled us into, off of the main roadway. (his rig was incapable to anything more than a short pull with a strap). Once a big rig was located and dispatched, we were towed to a repair shop in El Paso, TX. There they apparently identified a failed pressure sensor on the oil rail that controls the injectors. For the first couple hundred miles, there were no issues and all was well. Then while driving from Las Cruces, NM to Phoenix we experienced no fewer than a dozen anomallies where the engine would go into LIMP MODE, idiot lights on dash (Both "Check Engine" & "Engine Protect") came on. In the first instance, no matter what I did, I was unable to get it out of Limp mode until I shut off the engine for a few minutes and then restarted. After that the anomaly spontaneously cleared and we started driving again. For the next couple hundred miles we experienced Limp mode again with idiot lights as described above, but only briefly (so that we did not have to pull over) before the issue spontaneously resolved. I called the freightliner customer service number and we walked through all of the error/fault/diagnostic codes which resulted in zero negative findings and all systems reporting "Normal". (Side note the Password for the Monitor on my 2005 TropiCal T-396 is "8127" see photos attached). Has anyone else had a similar experience and if so, how did you fix the issue?
