I have a 5th wheel. If I’m parked on a relatively level parking lot attached to my truck can I open my slides without putting down my stabilizers?

You "can" but personally I wouldn't. It only takes a few minutes to put the stabilizers out. You may be perfectly level at first but as the slides come out, they may affect that. Then you run the risk of having an issue pulling them back in if you're not level anymore.

Again, this is just my personal practice. I'll bet many have done it with no problems.

I see fivers do this on occasion. I had a buddy that always stayed hooked up if he was just stopping for one night and would put his slides out. After a year he started having major issues with one of his large slides.

I personally wouldn't do it. If we dry camp somewhere that I can't unhook and level then we get by without putting any slides out.
