While not a Newmar this may help give you a feel for it. We have a 40' Coachman Encore TS with a 330 hp Mercedes. We tow a F150 SuperCrew 4 WD through the mountains on occasion. We have not had issues. We do not fly up the mountains.
 
I had the same engine towing 8k lbs ( 3/4 ton crew cab diesel )

It overheated on extreme climbs and long consistent climbs requiring me to slow down or take pull outs.

Your vehicle is far lighter and will not be a problem.
 
We are looking at buying a 37- 38 Newmar with a 360 Cummins. Will that tow a Grand Cherokee in the mountains?
Just be aware that you will be pretty slow on steep grades. The GC will weigh pretty close to 5k lbs curb weight (depending on model year). A NM with a 360 is very likely to have a 5k hitch. So you will have to watch how much "stuff" you load in the toad.
