Please help...2011 Coachmen Freelander

Hello RV friends. I have a 2011 Coachman Freelander Class C RV. My sensor for fresh water is on red which I believe means that my fresh water tank is full?
I am not sure how to empty it but I thought I did. I pulled up the mattress in the. bedroom and turn three dials which I thought emptied the tank.
So I have two questions...
(1) How do you empty the fresh water tank? If I did, why is my fesh waters sensor on red?

(2) How do you fill your fresh water tank?

And you're sure red doesn't mean empty?

Good question. I tried filling it with water (or I thought it did) and it never changed color.
