Do you mean are there different levels of interior on new Holiday Ramblers? Yes there are.
Or are you thinking of remodeling a used HR? If you were asking about a used RV there are no "packages" or "kits" to be purchased but there are places like Classic Coach Works in Ormond Beach FL. where I took our 2006 Holiday Rambler Ambassador to get new floors, newly constructed captains chairs and to have them covered in matching ultra leather. They also do cabinet work, install custom made desks, residential refrigerators, or just about anything else you can imagine.
