You could probably just use a pair of Velcro tabs, one up on the wall (behind the toilet) and another atop the toilet seat itself. When opened up, just align so the two tabs meet and engage one another.
 
does anyone know how to keep the toilet seat up
Remove the lid carpet/cover. Modify the shelf it rests against, or remove the lid!

Don't plan on sanitizing a seat that you have attached something like velcro to, it just won't happen!
 
I have yet to see a toilet seat in a camper that will not stay up? Maybe relevel the camper?

My mind went crazy with this! Wife driving you go to the head. You're standing there holding on to the towel rack trying to stay upright! You have a dilemma, you have one hand free and you must hold the lid up!!! Decisions, decisions!!!
