Final summary about Connect and Disconnect protocol is "it depends". As stated, campgrounds have different protocols that usually depend on specifics of the location and your rig. One thing I would add is keeping in mind consideration for other arriving rigs. It takes us less than 3 minutes to connect or disconnect our wrangler but if that means RVs sitting out in the highway we will try and move out of the way before disconnecting. Common sense goes a long way.
You did specifically mention Fort Wilderness. It has been 2 years since we were there but at that time, they had hitch and unhitch pull off lanes along the main drive inside the park. In general you will want to unhook there because all the sites are back-in and most of the loop drives are too narrow for other vehicles to get around you while you tend to business.
