When my RV is plugged into AC power, does the battery charge? How would I confirm it? Disconnect battery and check for voltage across the terminals, I guess?

Does the battery switch need to be on?

Second question, if I convert to lithium will the charger work? I suppose I could call Grand Design but figured somebody here would know.

Check battery voltage while unplugged and while plugged.

Depending on soc unplugged voltage between 10.5 and 12.67 plugged between 13.4 and 14.4

From Gemini: Yes, the key must be on. The "red" key in the universal docking station located in the pass through storage bay must be in the "on" position. If the key is "off" the converter is disconnected from the battery. The lights will however still work because they are powered directly from the converter.
If your converter is the WFCO 8955 ( lead-acid) it will charge Lithiums but not well. If you have the WFCO 8955-AD ( auto-detect) with the, green or blue LED, it learns you have lithium and will auto switch to the correct 14.4v profile.
GD didn't transition to the auto detect converters until late in the '21 model year. The good news is it's fairly simple to convert the lead-acid to an auto detect model.
