My local grocery store put up a sign yesterday saying fresh Hatch Green Chile's were going to be available 18-20th. I just got back from a "few" purchased (not admitting, don't ask!). Processing and freezing but if you are a HGC fan, be on the lookout, it must be that time of the year!
 
It is ALWAYS “Hatch Green Chile Time” around our house!“ When fresh ones aren’t available, 505 Southwestern is our go-to brand for canned (actually, jarred) HGC. We literally eat HGC at least once a day. They are great on eggs for breakfast. YMMV :rolleyes:

Hummus, Avocado, Camp charcoal roasted Hot Hatch Chilis w/garlic, sea salt, and lime juice. Ghost pepper sauce, Tajin, extra everything, red onion... 😋

Not sure...haven't seen many at 8'000 feet elevation in Utah. If back in Florida...I think I could suck on Citronella breath mints and still be carried away by mosquitoes. 🦟
 
Only found Medium Hot...had to use my Shishito Pepper baskets... 🌶

Vegos... vegan restaurant specializing in NuMex cuisine. Yummy Burrito smothered in "Christmas" (Red & Green)

It was so good, we went back the next day for lunch as well.

Wish we had one of these in our home town. One of those small baskets waiting to be roasted is mine. Red, Green, Mild, Medium, Hot l, X-Hot, XX- Hot, XXX-Hot... a host of varieties... Chile Konnection, Albuquerque, NM.

I went with Hot...and allowed a little Red mixed in. AWESOME!!! Complemented well with a dash of Tiger Hot Sauce.

Most of the HEB grocery stores in Texas have a roaster in the parking lot during the Hatch pepper season. You can tell immediately when you get out of your car because the smell is overwhelming.

Yes! I intentionally stood downwind of the roasters. Heavenly 😀 No better scented air freshener for your car than a hot bag of roasted peppers going home. Although...the peppers and I got kicked out of the Coach. Had to go outside to finish processing.
