Other than the obvious - romex is cheaper. Does anyone have any thoughts on choosing one over the other?

For 120 volt circuits the conductors have to be cable assemblies including the ground. If going with the 3 wire cables, and they have the voltage rating and a UL listing or other suitable as an NM-B replacement why not. Also consider that most 120-volt devices are designed for solid wire and sleeves, or other terminations may be needed.
There are also other options. Check out some cable options McMaster-Carr.
 
I used a small length of Romex to add a heater to my boat, never a problem in the 24 years I owned it.
