Need some advice and guidance for efficiently cooling our 94 Adventurer

Well in theory it's a great idea, but as far as placement it seems based on my search mini splits are easier to place on a Class B than a Class A, so far I have read how difficult it is to place a mini split in a class A and have yet to find a video that shows a successful install. The portable option starts to look more likely except the vent will have to go somewhere maybe through the floor?
Portable? You mean vented? Very inefficient!!!
 
I'm still on the fence with installing a mini split. If I put it on the roof I will need to help to get it up there and my clearance will be lower. If I add a rack to my bumper, I will have to route the wiring through a cabinet in the bedroom and install the inside part on the ceiling, any suggestions?

I would suggest watching this video,and letting your imagination do the rest!

 
I just installed an 18k btu Daizuki mini split on our 2104 Forest River Sandpiper 5th wheel. It is an absolute game changer. I did the installation myself. If you are pretty handy and a do-it-yourselfer, it isn't difficult at all. I'm attaching a few pics showing the indoor evaporator unit mounted over the door and the outdoor condenser unit on the rear bumper. The pic of the outside of the door shows the beginning of the installation of the line set cover that hides the the lines connecting the two units. I don't have a pic that shows the finished installation of the lines, but you can tell how the lines were routed around the door and to the bottom of the camper by the way the line set cover is laid out.
