I saw this somewhere on the web so I figured I'd give it a try. I put my blackstone on high and then put the NY strip narrow side / fatty side down for 2 mins. Flip it over for opposite narrow side for 2 mins. Now do each larger side as desired and you can actually see the cook happen. I like mine med-rare to med. It came out wonderful, delicious!
 
I have a Blackstone Tail Gate model. It's half grill and half griddle. It breaks down and fits into two carry bags that store nicely in the basement of the RV. I love it!! I cook hash browns and onions on the griddle for breakfast with eggs of course. I can grill Jalapenos or mushrooms or whatever I'm in the mood for! This "Tomahawk" ribeye and my wife's regular ribeye were done medium rare and came out perfect!! ?
