Time to follow the flow. Go back as far as you need to to find the obstruction, or lack of flow. The problem will become obvious. Something could have entered the system and could be any place like a fitting. I have nothing but time but I value it. I ran PEX when I got my rig. If I had such a problem I would add valves along the way till I found the problem. Anyone that saw this later may wonder what the valves were for but I would know.
 
We’re slowly getting down to the end of my list. The next is possible debris trapped in a valve. Either the bypass valve on the outlet or still at the check valve. Have you taken the check valve out and tested it “off-line”? Try connecting it to a hose and test flowing each way?
 
Another unwanted but a possibility...a kinked PEX or flex line?
