I recently installed an appletv in my rig, i mounted it to the back of the unit on the Televator and via a splitter feeds the indoor and outdoor TV's. I'm now watching more and more content via the AppleTV (Fox News, CBS (Star Trek junkie), local channels via Livestream etc..), vs. DirectTV. I've had 4k from DirectTV for several years at home but I rarely watch it as the content is limited and the movies you can download aren't worth the add'l cost for 4k. So I wouldn't get too focused on 4k to support your new TV, but I would consider an AppleTV as a key content source or one of the other quality streaming solutions.
That then leads to a data issue. If you have a high quality modem setup you can manage to stream very well in many areas. I've been fortunate that my ATT service doesn't seem to slow me down too much yet, even though i used about 70-90GB of data in a recent month split across 2 different sims. Verizon is not so friendly, but my ATT account is an old account with seemingly more liberal limits. My Verizon business account is only a year old.

Please let us know what you get, as I'm thinking about a replacement myself... and how to convince the wife

I suggest calling them as I think the 4K content is coming through their streaming partners and not SAT channels. Here is the section I captured for you.
