I think at this point @Jim it's a great opportunity to show your creativity. I know Newmar and owners are accustomed to uniform tile throughout but imagine an area that has black "styled" tile as a frame for an area? I think with some creativity you can come up with a winning design in the end. Trying to turn this to a positive for you :)
I agree with Neal. After seeing what you accomplished with your campground, this should be a piece of cake.

But first, I need to finish ironing out how this happened in the first place. Newmar's Essex Specialist is saying they exclude the tile to keep weight down (the expected answer) but I'm asking how a few tiles makes any kind of meaningful difference in the overall weight of a motor home this size.

And just as important, I’m also trying to figure out why this wasn’t considered a weight issue on my London Aire, where the tile did extend under the couch and the dinette. If it wasn’t a concern there, it’s hard to see why it would suddenly become one on the Essex.

And then there is @Underboss coach's. Why was weight not an issue on his rigs? Looking for some uniformity here.

The uniformity is it sounds better than, "The MBA's running the company did the math".
 
When we bought our coach in May it had a lot of stuff left in it and the one thing it did was 7 spare tile? I thought that this was the the norm?

I don't know if "7 spare tiles" is the norm or not. But tiles left in the storage area is normal.

I originally posted 8 spares, recount proved 7 also in mine

Ok I wasn’t sure. At least I will have spares if one gets cracked.

Not wanting to add fuel to the fire, but maybe the owner before you removed the spares due to the weight of hauling them around.

I have the tiles that were left, which in my case is 4. It will take 8 to tile the area. Not having the needed tile there is a bummer, but the bigger question is why wasn’t it tiled in the first place? Apparently some coaches get full tile, some don’t, and it’s starting to feel a little like there's a Tile Lottery going on and I don't have a ticket.

None of these coaches are bargain-bin specials. At the prices Newmar charges, you’d think “flooring under the furniture” would be included along with air in the tires. But apparently full tile is now an optional cosmic event that only occurs when the stars align, the production line is in a good mood, or the original buyer unknowingly said the magic words.
 
Reading about 7-8 spare tiles has left me with a mild case of tile envy. My coach came with only 3.
