Is the mattress a memory foam? It may not be a leak but the memory foam collecting moisture from the cooler wall and from... well... you.
 
There is plenty of YouTube videos and articles about this issue. Unless this is an actual water leak. I just did a simple Google search and found this product. Hope it helps.
 
If this isn’t an actual leak but is formed from condensation then need to start looking at contributing factors:
1) what is the relative humidity in the trailer? Need to keep it in healthy ranges through limiting humid air coming in and removing the humidity that is inside (dehumidifier and/or A/C)
2) condensation forms at the point where cooler temp meets the humidity (condensation on outside of ice water glass). I would measure the temp of that wood surface, top and underneath? If it is colder under that slab of wood, what can be done to better insulate that area and/or create inside trailer air circulation through that area to keep it the same temp as the trailer?
3) as mentioned above, moisture can be coming from you, May want to consider adding a moisture barrier to the top of your mattress. There are some plastic covers that aren’t noisy like covers from the past.
