Is there a specific type of wiring required or recommended for Class A 120vac use?
I plan to add a circuit breaker (there is a spot on the panel), wiring, and an outlet in order to replace the gas oven with an air fryer.
 
Are you planning to enclose the wire?
 
It looks like that governed by the NFPA 1192 standard which I'm too cheap to buy a copy of. Every RV I've looked at uses standard Romex like you would in a house. 12 or 14 gage depending on the expected current draw and breaker/outlet.

Yes as long as the Romex is not exposed. I personally use 12 awg for all outlets 20 amp and below. My guess is1500 watts on the air fryer. I would dedicate an outlet for the job and make it 20amps(12awg). If you see the wires I would enclose with conduit. They make stuff that is pretty for such a job!
 
If the run is not to long, MC cable(aluminum metal clad) is a good choice if it going to have exposure like Kevin says.

That's pretty much what I envisioned. I looked under the coach and my mind was greatly eased as my wiring job will be of much higher quality than what's there now.
