I've been running one ac unit off genny while traveling, weather today was pretty hot, can I run both AC's while driving
 
Yes. I did this in July.
 
Depends on which generator and coach you have. We run up to 3 on our Mountain Aire with 12kw gen. Really the same as boondocking
 
8K generators is limited to 2 units, but I suspect you have a bigger unit then that. You should be fine with two running.

Yep, should be fine. Had to do the break in run on our generator after we picked up the coach.

Actually had a hard time keeping it loaded for the 75% run portion. Both a/c units, getting the oasis electric hot water to kick on, etc etc. Everything seems pretty efficient on the new rigs overall.
