I'm tempted to try them as well. And for those with pantry door and/or drawers, could be a nice solution there too. Sounds fun!

On my 15 Ventana I installed a hook and eye on each of the pantry drawers to ensure they stayed closed during travel. Was easy to hook before travel and unhook upon arrival. On our 22 Dutch Star the pantry drawer slides require that you push them in to latch & unlatch the drawer slide. The Dutch Star has soft close slides on the other cabinet drawers and so far we've not had any open during travel. Since the OP does not want to leave the drawers slightly ajar when parked, a low cost but labor intensive option would be to remove the portion of the drawer catch that is attached to the drawer front. Perhaps this would be acceptable for the drawers that are used the most but would probably only want to us this option when parked for an extended period.

On the CanyonStar we swapped out all drawers to soft close. Worked well for us.
The Dutch Star has soft close on all draws standard.
