One of my favorite breakfasts is Burritos. I cook up a LB of sausage (heat per your choice), a LB of bacon and a 1 LB bag of shredded potatoes to which I add Onions, Garlic, Peppers of all kind and heat. Then I scramble and cook up at least 8 eggs, maybe a DZ. I add the sausage and bacon back into the potatoes when they are done, to warm it back up. I buy the biggest tortillas I can find, usually 10" at the grocery store and I steam the tortilla until warmed through on both sides. I set up a fab site and take the tortilla off the heat, add cheese and then scoop a portion of the potato/meat and one slice of bacon plus a scoop of eggs onto the tortilla, add more cheese to the top and roll it up.
The tortillas come in pkg of 10, so I make 10 burritos. I have one each morning (nuked) or mix up a different mix of food - yogurt, english muffins with jalapeno/strawberry jam, etc. I really love the Burritos though. Yum!
