How do I determine the correct fifth wheel purchase for my 2020 Chevrolet 2500 HD?
The truck has provisions for the fifth wheel. I just need to remove the plastic covers .
How is height determined?
 
The covers you are talking about are probably for a “gooseneck” type hitch, unless you get a pin box designed for a gooseneck.

How is height determined?
You probably have the 4 plastic covers and one in the center? The 4 covers come out and expose the attachment points of the puck system hitch. B&W builds very nice 5th wheel hitches. Can't go wrong in my opinion. I've owned 2. Plenty of height adjustment for different 5ers. Mine was a Montana 40' er and I had 8" clearance at the bed rails and a very slightly nose up trailer angle.
