I appreciate the comments from Jim and Jerry!
Based on what you and Jerry said, I'll be joining both lines together. What did you use to plug the elbows going into the tank? Any other tips appreciated.
I just wrapped some black tape around each nipple. But to be honest, I don't see any reason to cover it anyway. It's just a coil that you'll never use again anyway. I mean, the DEF header is broken, you're not going to fix it unless you replace it, so I can't really see any reason to worry about plugging the ends.

EDIT: I don't know if you read this or not, but here is the page where I did exactly what your are getting ready to do.

Well I finally pulled the hoses off my working DEF Head. Used 3/8" brass pipe/nipples and elbows to keep the hoses connected. The 3/8" tubes fit into the hoses quite well. Also bought black rubber stoppers (tapered and shaped like wine corks) with the correct width but the wouldn't go into the plastic elbows on the top of the head. So.... I also did tape wraps to close them up.

You sure they weren’t 5/8ths?
