There are two La’s, demarcated by a line running E. to W. through Alexandria. You won’t find Boudin, Pistolets, Rice and Gravy, ….much North of that line. Then S. La. West of N. O., especially around Baton Rouge and the Atchafalaya area is further divided among the German and French cultures. Germans ( St. Amant area) eat Gumbo w/ potato salad, French w/rice. N.O. meantime is largely Creole. A good coonass down there can look out across a field of rice and tell you exactly how much gravy it will take to cover it.
