There are two La’s, demarcated by a line running E. to W. through Alexandria. You won’t find Boudin, Pistolets, Rice and Gravy, ….much North of that line. Then S. La. West of N. O., especially around Baton Rouge and the Atchafalaya area is further divided among the German and French cultures. Germans ( St. Amant area) eat Gumbo w/ potato salad, French w/rice. N.O. meantime is largely Creole. A good coonass down there can look out across a field of rice and tell you exactly how much gravy it will take to cover it.
 
You think its hot in Florida, come down to the swamp in Louisiana.. Then you ll know what heat plus humidity is really like.. Been toflorida many many times ..Itz just a day at the beach to us cajuns. Lol

For me nothing better than seafood gumbo on German potato salad. Red beans and rice w/andouille sausage a close second. Then there's the gas station Boudin and Pistolettes which are hard to beat. Oh, Cher'i.
 
There’s a restaurant in Lakeland FL that introduced me to Oyster nachos. Soooooo good.
