I just purchased a 1995 210. I'm currently trying to get it road ready but the Illinois weather isn't cooperating.
As I progress,I'm sure I'll have more questions. But here are a few.
What are the little hinged wooden flaps attached to the wall behind the bed/seats used for?
In the rear interior there are 2 lights. One appears to be for the chassis(dome) the other for the coach. The coach light appears to have been replaced by the previous owner with an LED fixture. It comes on every time I start the van. I can manually shut it off. And start the van and the light comes on. I removed the fixture to test and it shows 9.5 volts constant. I've tested my house battery and it is bad. Is it possible that this fixture is a coach light. But because it's LED and the house battery is bad the light has a mind of it's own?
Do these vintage roadtreks have a water pump switch. Looks like a spot under sink next to the fridge. But it's just a hole.
 
We own a 1995 Roadtrek 210 on a Chevy G30 chassis.

On ours, the hinged wooden flaps attached to the wall behind the seats / beds ( I am assuming the back passenger seats) fold down when converting the seats to beds. The front seats swivel 90 degrees, lift up the back rest cushion, pull the seat cushion forward to meet the captain seats then place the back rest cushions in the void to make the bed.

In regard to the water pump, ours has a switch on the monitor panel that is wired to the pump to turn it on and off when using the fresh water tank.

Thanks. I found the water pump switch. And a vintage promotional video from Roadtrek that explained a few things.
I found the LED light in the back had a bad switch.
