Initially I thought that this option might be overkill for our travel but have since experienced just how great an option this has become.

If you travel longer than a weekend this is a must have item.

How has it helped you? How big is your indoor refrigerator?
Wanting to understand and learn what might be beneficial and if it would be for our use case.

It’s my beer cooler and vodka freezer.

We love ours, when we hit the road it's fully stocked, we have good connection on Bison meat at home, cheaper to buy in bulk, current trip is 3 months then 5 months in Florida if it survives milton

We are reasonably picky with food choices. Many items are not easily available on the road. Organic, grass feed and finished meat, certain vegetables, etc. We are not by large population centers by choice where you find large natural food markets.
most of what we buyer is either locally sourced from farmers, most of our food when home, or a well stocked natural food market.
With the basement freezer refrigerator we can stock our choices of food.
The main residential refrigerator is good but limited on space.
