We have a Dutch Star with a Dometic C80 Fridge/Freezer.

In the bottom on the inside is a little plastic door and a piece of thin foam, what is the purpose of this?

We possibly need to replace the foam piece as it is pretty nasty. Where can we find one?
 
That's the insulation access panel for the automatic defrost drain. The foam is a simple seal to keep cold air in and prevent a frost buildup behind it.
You don't need a specific replacement part. Just cut a new piece of closed-cell foam (like a thin craft foam sheet from a hardware store) to the same size and shape. Peel off the old foam, clean the area, and stick the new piece in.
