Water leak issue

Check water heater temp. Ours was 149 degrees which melted fitting at faucet Leak was not detectable until 1 to 2 hours after use.
 
This is a standard temp for a RV water heater. Based on the small capacity of hot water reserve, the hot water system is designed to mix hot water with cold to increase the capacity of usable "Hot Water" available for use.
Melting plumbing sounds like a manufacturer flaw using cheap plumbing pipe not suitable for the RV task.

There are lower temp thermostats available:

For instance for Atwood Atwood 93105 Water Heater Thermostat Kit - 110-150 Degrees

The dealer and Winnebago agreed that the high temperature caused the leakage at the faucet. The faucet only leaked when hot water was used. Googled and found several recommendations for RV water heaters, usually 120 to 140 degrees. Most recommendations were at 120 degrees to avoid scalding, especially around children.
 
The assumption is that this is thermostat delivered with vehicle. no doubt heat appears to an issue. The question then becomes why was the hot water circuit designed with this material? If they knew that hot water would cause leaks?

Don't care. As long as problem gets solved.
