For years there has been competition between Pueblo (Pueblo, Co.) green chiles an Hatch chiles. Both are excellent but as a Puebloan I prefer ours. As far as roasting you can get them already roasted at the local markets.
Haven't heard of that one, didn't know there was competition :)
 
What I do for mushrooms.
Remove buttons from stems...I use the stems also.. In a large pan, melt butter. Simmer buttons (stem side down) and stems until they start to brown. Turn buttons over and brown.
In a sauce pan, mix 1/2 cup of red wine, a pinch of basil, and about a teaspoon of diced onions. ( I use diced onions in a spice jar). Dimmer until hot, stirring occasionally. I sometimes will thicken a little with corn starch, other times not. Add the mushrooms and juices. Pour over steaks or what ever, or use as a side..
